Nitrate Free

Nitrate free means that the food product does not contain added nitrates during the brining process. However, if the food contains natural sources of nitrates, it can still be labeled as nitrate free as long as the labeling has an additional disclaimer identifying the non-synthetic source. Examples of non-synthetic sources of nitrates include celery powder and sea salt.
